Spain’s Sobrino de Botín opened its doors in 1725 and is recognized as the oldest restaurant (continuously operating) in the world. The restaurant was opened by French National Jean Boutin, and originally named Casa Botin. The restaurant specializes in cochinillo asado (roast pig), and have received accolades in the final chapter of Hemingway’s novel The Sun Also rises. He writes ““We lunched upstairs at Botín´s. It is one of the best restaurants in the world. We had roast young suckling pig and drank rioja alta. Brett did not eat much. She never ate much. I ate a very big meal and drank three bottles of rioja alta.”
The restaurant’s other signature dish is Sopa de Ajo (an egg, poached in chicken broth, and bathed in a garlic sherry reduction). The restaurant has been featured in nearly every foodie magazine and continues to be a favorite of tourists and celebrities alike. Also of note, artist Francisco de Goya worked as a waiter in the restaurant while awaiting admission into the Royal Academy of Fine Arts.
